New Job


I started my new job yesterday. I am still subbing, but I needed a second job for the money. I honestly thought I was done waiting tables, but it turns out I'm not. Buca di Beppo was the only place I applied for because I really wanted to work there. Luckily, I got the job. This week I'm in training. Right now I feel like I'm in everybody's way. I hate that feeling, but I know it won't take long to get the hang of things. Today I was a little late and it totally threw me off. Hopefully tomorrow will be better. Other than that, I haven't been up to much.

Project 365 - Week 2

Since I rarely leave the house, most of my pictures consist of my animals and food. But who doesn't like cute animals and food?!

This was a lazy day around the house and we decided to give the dogs the chew bones they got from Santa. Most of the pictures turned out blurry, but I did get this one. Look at those teeth. So fierce!

We had a snow day in Texas! I was hoping it would be as wonderful as it was last year, but in true Texas style...it wasn't. Riley sure doesn't mind being out in the elements.

After reading this post, I decided to try making quinoa. I don't like rice, so I thought I could substitute it in stuffed peppers. These were the yummiest (and easiest) stuffed peppers.

This crushed box that was marked "fragile" contained my new 50mm lens. I have lost all faith in the United States Postal Service. First they bent my limited addition record by shoving it in an apartment mail box, they wrote on our mailbox with permanent marker 4 times, and now this. In case you are wondering, the lens was fine.

My best friend Amber and I went to see Blue Valentine on Wednesday. Afterwards we went to the Lemon Bar for a drink. We ordered these gorgonzola fries that were to die for. It's a crappy picture since it was dark, and it was the only picture I took that day (fail). I've been dreaming of these fries ever since.

This is one of those pictures where I was at the right place at the right time. I was trying out my new lens and what better subject than a kitty. Dogs move around too much. As I was snapping away, she decided to yawn. How awesome is this photo?! And I love my new lens :)

Friday night Mom brought home Potbelly for dinner. I love me some Potbelly. If you've never tried it, you must. I get the skinny turkey with hot peppers and pickles. You'll never want to eat Subway again.

I've been snuggled in my bed for weeks

Well not really, but that’s what it feels like. I haven’t subbed since early December, so I’ve been pretty much stuck at home since then. It may sound nice, but I can’t spend any money, so I usually spend the day in my pajamas watching TV. I’m now making a considerably less amount of money than I used to, so I decided to get a second job. I interviewed at a restaurant that I really wanted to work at last week. I got the job but they haven’t contacted me to let me know when training starts. I’m starting to get very anxious. Not that I’m excited about working 2 jobs, but I need some money. And I need it soon. Even though I dread waiting tables and I said I wouldn’t do it again, I’m looking forward to meeting new people and hopefully making some good money. I’d really like to be able to pay my bills and start paying off some debt. Plus I want to get out of the house.

During my time off I’ve found some really great new blogs to read, played with my new 50 mm lens, crocheted, and cooked a lot of new things. This year I wanted to cook more and make more from scratch. I thought I’d share what I’ve been eating this past week.

Homemade pizza

Instead of using sauce, I mixed ricotta cheese, mozzarella cheese, and caramelized onions together. Then I spread it on a tortilla wrap. Next I added roasted yellow peppers, artichoke hearts, olives, sun dried tomatoes, and mushrooms. It was so delicious.


Caesar salad

This is my new favorite thing to eat. I just used romaine lettuce, low-fat mozzarella cheese, and fried onion strings. Then I topped it with lite caeser dressing. I think the onion strings are a good substitute for croutons.

Mini pizzas

I got the idea for these from this post. I used an English muffin and topped each piece with mozzarella (pre-sliced) and tomatoes. Sometimes I eat it with a salad, but it’s good by itself. And it’s super easy and fast to make.

Stuffed peppers

I got the idea to try quinoa from this post. I thought it would be good in stuffed peppers, and it was! I stuffed the peppers with cooked quinoa, ground turkey and cheese. They were so good we ate them 2 nights in a row!


Snack crackers

I wanted something light to eat the other day so I used Town House crackers and topped them with pesto cheese and buffalo chicken. So yummy.

Project 365 - Week 1

So I finally decided to do a 365 project this year. I started off taking pictures just in case (hence the first picture). I feel like I need to make a list of things I want to take pictures of or most of my pictures will be of my animals :) If you want to view my Flickr set, here is the link.

Yummy Potatoes

Lately I've been trying to cook more food from scratch and stay away from processed food. I made these super easy (& delicious) potatoes, and I thought I would share.
I started with 2 medium red potatoes. Wash them and cut into cubes.
I placed the potatoes in a bowl, since it's easier to mix them up. Now add 1 tbsp. olive oil, 1 tsp. minced garlic, a pinch of salt, and as much rosemary as you want.
Time to get your hands dirty! Toss potatoes until well mixed.
Pour out potatoes onto a cookie sheet and cook at 375 degrees until tender. For even yummier potatoes add some melted butter in the bowl with the other ingredients. Enjoy!
